Recipe Box: Easy Gluten-Free Cookie Recipe for Celiac Awareness

Here is a super simple and delicious gluten-free cookie recipe to enjoy after school! They are gluten-free and a good option for those managing Celiac Disease or sensitivity to gluten. The goji berries are optional but add a nice pop of color to the cookies and support the immune system. You could also substitute with raisins or dried cranberries. Get the kids involved and have them assist with making these — they'll probably love mashing the banana and stirring the mixture.

Note: Rolled oats, chocolate chips, and nut butters are generally gluten-free, but some brands may be manufactured in a plant that is not. Be sure to check the label if this is a concern for you.

Easy Gluten-Free Cookies

  • 1 banana
  • 1 cup GF rolled oats
  • handful of goji berries, raisins, or dried cranberries
  • handful of mini dark chocolate chips
  • your favorite GF nut butter (we like almond)

Preheat oven to 350ā„‰. Mash the banana and combine with the oats, berries, and chocolate in a mixing bowl.

Form into small circles. Place on a cookie sheet misted with cooking spray. Bake for 15-20 minutes.

When they come out of the oven, spread some nut butter on top. Let cool. Eat with your loved ones!
